Description
- Preheat oven to 200C/180C Fan/Gas Mark 6
- Heat 2 tbsp of oil in a roasting tray
- Peel and cut carrots and parsnips into large chunks
- Simmer in water for 3-4 mins to slightly soften
- Drain off all the water
- Coat the carrots and parsnips in 1 tbsp of oil
- Sprinkle over all of the seasoning
- Add the coated carrots and parsnips to the heated roasting tray
- Roast for 30-40 mins until golden brown, turning part way through
