- Young cheese: 35 days or more before the Use By Date, texture is quite firm and flavour is light and fresh
- Ripe cheese: Between 35 and 20 days before the Use By Date, texture is soft and melt-in-the-mouth and flavour is distinctive
- Mature cheese: 20 days or less before the Use By Date, texture is very creamy, soft and melting and flavour is pronounced
- Cheese strength is 4, full-flavoured and creamy soft ripened cheese made from pasteurised cows’ milk.
